2 | teaspoons | lemon peel, grated | |

Salad: | |||
4 | cups | baby spinach | |
|
|||
2 | cups | deli smoked turkey breast, cubed | |
|
|||
1-1/2 | cups | fresh strawberries, sliced | |
|
|||
1 | can | (11 oz.) mandarin oranges, chilled and drained | |
|
|||
2 | slices | red onion, thinly sliced, separated into rings | |

Dressing:
In small saucepan, combine jelly, vinegar and lemon peel. Cook over medium high heat until jelly is melted, stirring frequently. Cool 10 minutes.
Salad:
Arrange spinach, turkey, strawberries, oranges and onions on 4 salad plates; serve with dressing.
